Delicious Fluffy Cider Pancakes to Whip up  this Fall

Ingredients for pancakes:
  • 2 cups all-purpose flour
  • 2 tablespoons castor sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 10.6 oz Greek Yogurt or 280g
  • 1 cup apple cider
  • 2 eggs separated
Steps to make pancakes:
  1. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
  2. In another bowl, combine the yogurt, apple cider and egg yolks. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  3. In another bowl, beat the egg whites until stiff peaks form. Add 1/4 of the egg whites into the pancake batter and stir in to lighten up the mixture. Add in the remaining whites and fold in, just until combined.
  4. Heat a non-stick frying pan over medium heat. Lightly spray with cooking oil or coat with a little butter
  5. Using a ladle, scoop some batter into the pan and cook pancake on one side for 2 mins. Flip over pancake and cook for another 1 min until golden brown
