Gluten Free Oatmeal Pancakes (Makes about 8-9 round pancakes)

1 1/4cupsrolled oats
1cupoat milk/ almond milkor whatever milk you desire
Blend the oats in a food processor until fine like flour then pour them into a mixing bowl
Add in the baking powder, salt, sugar, cinnamon and nutmeg and mix well.
Add in the milk and egg and mix till well incorporated.
Set aside the mixture and let thicken for 5 mins.
Heat a non stick pan at medium heat and grease with a little butter. Ladle 2-3 tbsps of batter into the pan and cook pancakes for 2 1/2 mins on one side. Flip pancakes over and cook additional 1- ½ mins on the other side until golden brown.
Serve pancakes with maple syrup, honey, nut butter, pb butter or whatever you fancy!
