Fans of Peanut Butter will seriously love this Peanut Butter cookie. It’s not a cookie where you’ll struggle to discover the taste of the cookie you’re consuming. This PB taste hits you as soon as you bite into it. You can use any brand of PB to make this but preferably one that is not too oily as it might alter the texture of the cookie.

Peanut Butter Cookies

I use Skippy creamy peanut butter to make these Peanut Butter Cookies and they turned out amazing. Always make a bigger batch so you won’t regret if you have to give a little away. I gotta admit, I got too carried away eating them that I suffered a bout of sore throat the very next day. Needless to say, I have no regrets and I would have done the same again.

As we are drawing close to the festive season, I decorated the peanut butter cookies with a little Christmas Sprinkles. You can get any kind of Holiday Sprinkles to decorate your cookies. As long as they look festive, I’m pretty sure everyone will be swooning in for a piece. I melted some Dark Chocolate into a bowl and dipped the top half of the cookie in it and sprinkled the Sprinkles over. Leave to set completely before packing them. If you’re staying in a humid country like mine, you can pop them in the fridge for the chocolate to set for a few minutes. Cookies usually get hard in the fridge, so leave it to cool until room temperature for the best tasting cookie! The Peanut Butter taste will be more pronounced as well. Seriously Yummy Peanut Butter Cookies (Makes about 20 medium size Cookies)

A Seriously delicious peanut butter cookie

Course: Breakfast, cookies, Dessert

Ingredients
  • 150 g all purpose flour
  • ½ tsp baking powder
  • 1/2 tsp baking soda
  • 120 g unsalted butter Room temperature
  • 100 g Castor Sugar
  • 70 g brown sugar
  • 1 egg Room temperature
  • 200 g Skippy creamy peanut butter
  • 100 g Dark Chocolate Chips Optional
  • 50 g Dark Chocolate Melted ( For dipping the cookies)
  • Christmas Sprinkles
Instructions
  1. Whisk the flour, baking powder, baking soda together in a medium bowl and set aside.
  2. Using a hand held mixer,, cream the butter, castor sugar and brown sugar together on medium speed until light and creamy ( around 2-3mins).
  3. Add the egg and beat on high until combined, about 1 minute.
  4. Add the peanut butter and beat on high speed until well combined.
  5. Add the flour mixture and mix on low until combined.
  6. Fold In the chocolate chips and do not overmix.
  7. Place a cling wrap over the bowl and refrigerate for about an hour for the dough to harden a little so it wouldn’t spread too much when baking.
  8. Preheat oven to 170deg Cel.
  9. Line Baking tray with non stick baking paper and roll cookie dough into 1.5-2” balls.
  10. Bake for 13-15mins until golden brown.
  11. Remove from the oven and leave to cool completely.
  12. When cookies are cooled, melt some chocolate and dip the top half of each cookie into the melted chocolate. Sprinkle some festive Christmas sprinkles over and leave to dry completely before packing
