The Perfect Orange Cranberry Scones recipe for tea break. These scones are crumbly
at the edges and so delicious on the inside.
This recipe is adapted from Sallybakingaddiction. Her recipes and desserts are stunning. When she claims these are one of the best scones, you cant deny any further..You just gotta get your hands dirty for some of these scones. I gotta admit scones are not really my first choice of desserts. When I think of high tea, I think of mini cakes, cookies, brownies and eclairs. Dry, Bland, Rock hard were the only words I could use to describe the scones I ate. Sadly…. But these Orange Cranberry scones were the changing point for me.

Gotta agree that desserts taste best when homemade. Especially when it comes popping right out from the oven. Warm and crispy. And then you slab some butter and jam on top and watch the butter slowly melt under the residual heat emitted from the orange cranberry scones. And before you know it, you are popping bits ok maybe chunks of these delicious scones into your mouth without realising that you did finish half the amount of Orange Cranberry scones you initially made. I got you hooked didn’t I! Anyway if you love the combination or Orange and Cranberry, you’ll love my all time favourite Orange Cranberry Cookies . I also have a Orange Cranberry cake version which only comes about during Christmas.
What do you need to make these delicious Orange cranberry scones?
Mixing bowl
Food processor
Spatula
Egg
Vanilla paste ( I use Nielsen Massey Vanilla Bean Paste)
Castor sugar
Heavy Cream
Cranberry
1 orange ( Zest it before you squeeze the juice out)
All purpose flour
Baking powder
A pinch of salt
Cold butter
First steps to creating these magical scones
- In a food processor, pulse the dry ingredients ( Flour, baking powder, salt and orange zest) until well combined
- Add in cold butter and pulse for a few secs till mixture resembles crumbly or coarse sand ( Do not overmix)
- In another bowl, whisk egg, cream, sugar and vanilla together.
- Pour the flour mixture into a mixing bowl and create a well in the middle. Pour in your egg mixture and fold gently to combine.
Add in cranberries and mix. Do not overwork the dough.
- Flour the workspace area you are going to put the dough on and your hands. Roll dough to about 3cm thick and using a Round cookie cutter, press down into the dough ( without twisting) to cut out the scones. Place on baking tray and bake at 190deg Celcius for 12-15 mins until slightly golden brown. Let cool before you prepare the glaze
- The glaze of orange fresh juice and icing sugar adds the extra sweet orange flavour to the scones.

Delicious homemade Orange Cranberry scones. Perfect for your tea break
- 2 cups all-purpose flour+ plus more for hands and work surface or 250g
- 2.5 tsp baking powder
- ½ tsp salt
- zest from 1 orange
- 1/2 cup unsalted butter, cold or frozen or 115g
- 1/2 cup heavy cream or 120ml
- 1 large egg
- 1/2 cup Castor Sugar or 100g
- 1 tsp vanilla extract
- 125 g dried cranberries
- 1 cup confectioners' sugar or 120g
- 2-3 tbsp fresh orange juice

Preheat oven to 190deg cel. Adjust baking rack to the middle-low position. Line a large baking sheet with baking paper and set aside

In a food processor, pulse flour, baking powder, salt, and zest together for 3 sec to mix them.

Add in the cold butter and pulse until mixture is crumbly and still coarse. Do not over pulse as the butter would melt. Just a few pulse would do. Pour flour mixture into a mixing bowl.

In another bowl, whisk the cream, egg, sugar, and vanilla together.

Making a well in the middle of the flour mixture, drizzle the egg mixture over and toss the mixture together with a rubber spatula until everything appears moistened.

Slowly and gently fold in the cranberries. Try your best to not overwork the dough at any point. Dough will be a little wet.

Work the dough into a ball with floured hands as best as you can and transfer to a floured surface. Press down slightly to get a flat surface and using a 2-2.5” round cutter, press cutter firmly down onto the dough. Do not twist and turn as you press down as this might affect the height of the scones.

Place scones at least 2 inches apart on the prepared baking sheet and bake for 12-15mins until lightly golden. Remove from the oven and allow to cool for a few minutes as you make the glaze.

Whisk the confectioners' sugar and orange juice together. Add a little more confectioners' sugar to thicken or more juice to thin. Drizzle over scones.
Scones taste best the day it is made or even best if they come straight out from the oven. You can leave them at RT for a few days or freeze them and microwave them for a few secs before consuming
