Jam Thumbprint Cookies

Have you tried making yourself a batch of thumbprint cookies? If you haven’t, you should probably do it soon. No I mean like right now… Get into the kitchen and start working that flour and butter! It melts in your mouth like fluffy clouds. That buttery mouthfeel is so desirable. It just feels so right! The only place they need to be right now is in my mouth!

To be honest, this is my first time making thumbprint cookies. I made it because I wanted to pair the new Chia Spread I received with something. I already tried it on toast and yogurt so the next thought was to try it on cookies and IT WORKED. GUYS IT WORKED.

Still trying to figure out the best way to get the cookies in the perfect round shape after imprinting my thumb into the cookie. I tried to use a melon baller and one of the fondant ball tools but the dough stuck to it. Not a good idea. If anybody has tips, feel free to share them. Nevertheless, ugly shape or not… We don’t really care as long as they taste awesome!

Butter Cookies

The greedy side of me couldn’t resist stealing a cookie while in the midst of the photoshoot. Those pesky fingers are always out to “steal a taste” first before starting the real work. I’m pretty sure there are a lot of guilty people with this habit as well. So I’m not ashamed.

If you’re into buttery cookies, these thumbprint cookies definitely fit the bill. Let me tell you the closest thing they taste like….Chinese New Year Pineapple Cookies. I swear they taste like that!! Those Pineapple cookies that melt in your mouth with a little tangy pineapple filling. The only difference is these thumbprint cookies are open face and you get to decide what kinda jam or filling to fill the centre.

Not a fan of buttery cookies, don’t worry. I have tons of Dark Chocolate Chip Cookies or Chocolate Speculoos or Peanut Butter Cookies that will leave you speechless because the only thing you’ll be doing is eating..

Delicious Buttery Cookies that melt in your mouth. (Recipe makes 24 small cookies )

Ingredients
Ingredients for Thumbprint Cookie
  • 110 g Unsalted butter Room Temperature
  • 1/3 cup castor sugar
  • 1 egg yolk
  • ½ tsp vanilla paste
  • 150 g cake flour or all purpose flour
  • ¼ tsp salt
  • Jam For the filling
Instructions
Steps for the Cookies
  1. Line a cookie sheet with non stick baking paper
  2. Beat together butter and sugar with an electric mixer until light and fluffy ( about 2-3 mins).
  3. Add in egg yolk and vanilla and beat until combined
  4. Add in flour, salt and mix until just incorporated.
  5. Wrap dough in plastic wrap and refrigerate for at least 2-4 hours.
  6. Preheat oven to 190deg Celcius
  7. Roll dough out into 1 inch balls and arrange onto prepared cookie sheet.
  8. Indent the centre of the ball with the back of a spoon of using your thumb.
  9. Bake cookies in preheated oven for 8 mins until edges are slightly golden brown.
  10. If indentations are not well defined, repeat the process of using a spoon to indent the hole further.. Add some jam into the centre of the hole and bake for an additional 3 mins.
  11. Leave to cool completely.
Recipe Notes

Notes: Cookies will become softer the next day. This cookie melts in your mouth and reminds me of pineapple tarts!
