Chocolate Durian Cake

This Chocolate Durian Cake was baked for a special occasion – to celebrate Fathers’ Day as well as Mummy’s birthday. Both of them love durians so this cake was baked specially for them! How many of you love durians? It’s a love or hate relationship for some right? Honestly, I’m not such a crazy fan of durian that I have to eat them frequently. My love for them diminished the moment I started baking my first durian cake. Crazy much but the smell of durian is so pungent when you remove the flesh from the seeds and start mashing them. I swear it was some sort of chemical warfare in the house. Eating durians directly from their seeds is a whole different story ( It’s more pleasurable).

What goes into making this delicious Chocolate Durian Cake?

It’s 3 layers of fluffy vanilla sponge cake filled with a creamy and smooth durian mousse filling. The top is then covered with a shiny Chocolate Mirror Glaze ( This glaze helps achieve that professional look that you can see your own reflections in). Head over to my latest post for the recipe.

Durian Cake

Not the prettiest looking cake but definitely one of the tastier cakes. How many of you will agree that sometimes the most delicious cakes look the ugliest? Haha at least what goes in makes the tummy happy ehs? So so the durian mousse filling is a little on the softer side as I wanted a cake that just simply melts in your mouth. You can always add gelatin to thicken up the mousse so it holds its shape better.

Chocolate Durian Mousse

A creamy durian mousse vanilla cake

Course: Breakfast, brunch, Dessert, teabreak

Ingredients for Vanilla Sponge Cake
  • 3/4 cups castor sugar
  • 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cups cake flour
  • 1/2 cup oil
  • 2 large eggs Separate egg yolks from egg white
  • 1 tbsp vanilla paste
  • 1/2 tsp cream of tar tar
Ingredients to make the Durian Mousse
  • 350 g Durian flesh
  • 1 cup whipping cream
  • 2 tbsp icing sugar
  • Gelatin Optional
Steps to make the Vanilla Sponge Cake
  1. Preheat oven to 175 deg cel ( 370 F). Grease and line 3 6″ Round baking tins with baking paper.
  2. Sift cake flour, salt and baking powder. Set a side
  3. Place egg yolks in one medium bowl and egg whites in another bowl
  4. Add 1/2 cup castor sugar, oil to the egg yolk bowl and beat until combined.
  5. Add in cake flour mixture and mix until just combined ( Dont overmix).
  6. In a separate bowl, whip egg whites till foamy then add cream of tar tar.
  7. Continue to whip egg whites until soft peaks then gradually add in the remaining 1/4 cup castor sugar in 3 additions.
  8. Whip until stiff peaks
  9. Fold 1/3 of the egg white mixture into egg yolk mixture to loosen up the batter
  10. Fold remaining egg white mixture until the batter has been well mixed.
  11. Pour batter equally into the baking tins and bake for 20-25mins until toothpick inserted in the middle of the cake comes out clean.
Steps to make Durian Mousse
  1. Whip cream with icing sugar till soft peaks.
  2. Fold in durian flesh until well combined
