Apple Cider Pancakes will rock your world this fall. Fall has got to be my favourite season although we don’t experience any here in this part of the globe. Beautiful fall trees, a burst of colours when you walk by the road and not too harsh weather is one of the reasons why I love to travel during this time of the year.
And boy I gotta admit, the range of desserts that “appear” during this time of the year makes me super excited. Cinnamon, Apples, Spices, Pumpkin Spice, Caramel drizzle. Argh, if that didn’t make you drool a little, I don’t know what will. So I decided to make pancakes. Apple Cider Pancakes to be exact. If you follow my Instagram, you’ll probably see stacks and stacks of Pancakes occasionally. Sometimes consecutively because that’s when I have an intense craving for pancakes everyday or when a family member specifically request for them.
To be honest, this is my first time experimenting with Apple Cider in desserts. I’ve done apple cider drinks or just drinking them as a daily cleansing routine but never added it as part of a dessert ingredient. I’ve got to thank Deborah from Tasteandtell for inspiring me with her delicious Apple Cider Pancakes. She has a delicious cider syrup to accompany the pancakes but this time round, I was eyeing some of the Pure Canadian Maple Syrup I brought back on my recent trip to Canada so I decided to go with that.
It was amazing. These Apple Cider Pancakes were out of this world. If you love Apple Cider, this pancake will not disappoint. If you are intending to keep the leftover pancakes for a few days, just store them in an airtight container in the fridge and microwave it for 30secs when you want to consume again and you will be blessed with fluffy Apple Cider pancakes again. Can I hear a big YAY?? Oh Btw i use Alcenero Organic unfiltered apple cider vinegar to make the pancakes. They have a wide range of biscuits, jams, pasta, pasta sauces as well. I personally love their Cocoa biscuits and yogurt ones.

Delicious Fluffy Cider Pancakes to Whip up this Fall
- 2 cups all-purpose flour
- 2 tablespoons castor sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 10.6 oz Greek Yogurt or 280g
- 1 cup apple cider
- 2 eggs separated

In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.

In another bowl, combine the yogurt, apple cider and egg yolks. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

In another bowl, beat the egg whites until stiff peaks form. Add 1/4 of the egg whites into the pancake batter and stir in to lighten up the mixture. Add in the remaining whites and fold in, just until combined.

Heat a non-stick frying pan over medium heat. Lightly spray with cooking oil or coat with a little butter

Using a ladle, scoop some batter into the pan and cook pancake on one side for 2 mins. Flip over pancake and cook for another 1 min until golden brown
