THESE BURGER PATTIES ARE LEGIT! Oh wait have you ever eaten a veggie patty. As the name suggest, there’s none of that unhealthy meat stuffed in there. Only veggies, lots of protein and healthy stuff to get you going for the day. I’m a meatlover no doubt but I love my veggies tooo! Due to the sudden surge in baking these days, I am swept into this pang of guilt. Too much sugary stuff overload. Whenever I see cakes, it turns me off. My hubby said I’m losing touch with desserts. There was once upon a time when I had desserts for breakfast, lunch and dinner. Cakes were the first thing I took at a buffet setting. Times have changed, I no longer have these sugar cravings ( Ok occasionally I do) but it’s not like crazily addicted….
Being inspired by all my foodie friends, I have come to a compromise on my diet. I’m not here to promote changing your diet to a pure vegetarian one… I’m sure we are often reminded by the HPB on how important it is to eat and live healthy so lets leave it to them…
Eating veggies does not have to be a chore nor does it have to be forced down your throat. When I made these, it certainly didn’t taste like a “patty’ that was vegetarian. Hah!! The secret lies in that juicy flavourful Portobello mushrooms as well as that Texas Steakhouse rub. No steak involved here but doesn’t meant I cant play around with the spices. This recipe was inspired and adapted from Lori from The Kitchen Whisperer. Sometimes you look at a food picture and after gawking for a good 5mins, you know you’ll have to bookmark that recipe and make it someday. This is one of those days!!
Just a bite into this patty and you will be overwhelmed with the taste of that juicy mushrooms, crunchy broccoli and beans. Any Mexican burrito loves here? It feels like biting into a burrito. The original recipe calls for black beans but I had a can of cooked kidney beans laying around in the pantry. It was an eyesore so I had to clear it. That happens when you go grocery shopping and tend to pick up things that you feel like eating outta impulse and then you leave it there for a couple of weeks and a couple of weeks more and you slowly forget about its existence.
This patty is really moist and juicy. AND The best thing is, it’s so healthy and nutritious for you!! You’ll love every bite of it. Even for meat eaters I assure you. The steakhouse rub is the bomb!!
Vegetarian Mushroom Patties ( Makes about 15 small)
Ingredients
1 cup Portobello mushrooms, cubed
1 cup cooked kidney beans
1 cup minced broccoli
1/4 cup red onion, minced
1 1/2 eggs, beaten
1/2 cup Panko bread crumbs
1/2 tbsp texas steak rub
1/2 tbsp worchester sauce
1 tbsp minced garlic
1/2 cup fresh grated Parmesan
Instructions
1) Mash Kidney beans in a bowl. Leave some chunky ones
2) Add in the mushrooms, broccoli, garlic, onion, Worcestershire and steak seasoning.
3) Add in the eggs, cheese and bread crumbs and mix until mixture is well combined. If mixture is too sticky to roll into a ball with your hands, add somemore panko.
4) Heat a non stick pan with a little oil. Scoop up a little of the batter into your hands and roll until you get a ball shape. Slowly press down a little to form a flatten “patty”.
5) Place in the oil and cook for 3-5 minutes per side or until golden brown and a crust has formed on each side.
6) Serve warm!! It’s so gooddd.
