Waffles- they make the perfect breakfast or brunch. Actually, you can enjoy them anytime of the day. Waffles with maple syrup, scrambled eggs and eggs benedict in the morning, waffles sandwich stuffed with your favorite ingredients for lunch, waffles with fried chicken for dinner and finally waffles with ice cream for supper.
Holy Waffles right! The term buddy has been deeply ingrained in my definition of waffles. Maybe more so because I enjoyed the best waffles at the place with awesome waffles and with the company of my best buddy.
Chewy waffles with a crispy crust are my favorite. I wouldn’t mind an occasional crispy waffle with fluffy centre. This recipe with the separation of yolks from whites produces a fluffy waffle that you can’t resist.
This Recipe makes 10.
Ingredients
1 3/4 cup flour
1 tbsp baking powder
1 1/2 tsp sugar
1/4 tsp salt
1 3/4 cups milk
2 beaten egg yolks
1/2 cup oil
1 tsp vanilla
2 egg whites, whipped till stiff
1 tsp cinnamon (optional)
Steps
1) Combine flour, baking powder, salt and sugar in a bowl
2) Create a well and add oil, egg yolks, milk and vanilla. Mix well till just combined
3) Beat egg whites until stiff peaks
4) Gently fold into egg yolk mixture.
