Matcha or more commonly known as green tea is a popular flavor in Asia for their teas, bread, desserts etc. I drink green tea almost everyday because I love it. For matcha fans, you’ll be delighted to know that there are a couple of health benefits linked to it:
1) High in antioxidant
2) Cancer fighting properties
3) Calming effect when consumed
4) Helps to improve memory
5) As it contains caffeine, it helps boost energy levels
6) It increases metabolism and burns fat faster
7) Detoxifies the body
Sounds too good to be true right. Anyway, have you ever wondered how awesome a cookie would taste with matcha in it. I decided to do up a batch to enjoy over the weekend.
(Makes about 60 medium cookies)
Ingredients
– 65g cake flour
-60g all purpose plain flour
-1/4 tsp salt
-1 tsp baking powder
-1/2 tsp baking soda
-70g unsalted butter, RT
– ½ egg
-1 tsp vanilla bean extract
– 1 tbsp matcha powder ( or more for a stronger taste)
-50g brown sugar
-60g castor white sugar
-130g chocolate chips
Steps
1) Sift Flour ( Cake + All purpose) with matcha powder, baking powder, baking soda and salt
2) In another mixing bowl, cream butter + sugar until light and fluffy ( About 5 mins)
3) Add egg and vanilla extract and mix well to combine
4) Add flour and mix until just combine. Don’t overmix if not your cookie would turn out hard
5) Fold in chocolate chips
6) Refrigerate batter for 1 hr or until batter is hard enough
7) Place a drop of batter the size of a 50c coin onto baking tray lined with baking paper
8) Preheat oven to 170Deg C
9) Bake cookies for 20-23 mins or until edges of the cookies starts to turn golden brown.
10) Let cool on rack. It will be crispy when cooled
Enjoy! With a cup of green tea or milk. I felt that 1 tbsp of matcha powder wasn’t really sufficient or maybe the chocolate overpowered the subtle taste of the matcha. I would reduce/remove the chocs or increase the matcha next time round.!
