Daring Bakers’ June Challenge- Battenberg Cake

The next cake inspiration comes from the DB challenge for June and also from the ombre crazed cakes that have been spontaneously appearing out of numerous blogs. I guess when Pininterest first started; the boards were filled with items people love and are willing to share with the community. Over time, repins of one’s favorite item were too massive that you eventually see an influx of ombre cakes around.

I had the honor of baking my Mum’s birthday cake! It blends in significantly well with the theme of the DB June Challenge- The Battenberg cake which was specially named after the princess and prince of Battenberg and derives its uniqueness from the chequered pink and yellow squares.

“Mandy of What The Fruitcake?! came to our rescue last minute to present us with the Battenberg Cake challenge! She highlighted Mary Berry’s techniques and recipes to allow us to create this unique little cake with ease.”

This is one cake that plays on colors as well and extremely fitting for the royalty in the house ( my beloved Mum) haha.. The cakes are baked (2 tone) and then wrapped in marzipan. In this case I opted for fondant since I was well versed in it. Additional pearls on top to make it more elegant looking!

Baked with Love and Care:  Orange Battenberg Cake with orange apricot gel wrapped in a layer of white fondant!

Happy Blessed Birthday Mummy! Love you lots!!! 🙂
