I never fancied chilled cheesecakes over the baked ones. To me the baked ones were richer, creamier and had the more Yum factor. However ever since, I started mixing the puree of fresh fruits into the chilled cheesecake mixture, it brought the chilled cheesecake to another level and I liked it better ever since ;). Never hurts to have pockets of hidden fruits in the cheesecake.
This version is a light and refreshing mango cheesecake over a thin graham crust and topped with even more mangoey goodness. Enjoy!
