Crème Brûlée Tartlets

Why is March the time for farewells? I don’t get it. I just know that I’ll be missing a lot of people close to me. Before my sister left to the world of fresh sashimi and ramen, I baked her favourite crème brulee.

I threw the vanilla pod and seeds into the milk/cream and let the flavours infuse together overnight. The next morning I whipped up the custard base and repeated the chilling process overnight. Again a simple process, however when it comes to piecing them together, time plays a huge factor.

Love how the speckled dots of vanilla seeds disperse themselves among the custard. 

And then moving on to the tart base…. It’s getting the dough right, chilling them, rolling, molding them into the tart shells and then freezing them again to let the butter set. With so many steps involved, it’s always better to make a bigger batch to save on “effort” or in my case ( I like to bake other desserts alongside) so I get to stay in the kitchen with my hands busy and not wait for the previous dessert to set.

It's also never too much to include strawberries as part of any decoration. They are just so pretty to look at.

To sum it up, the filling of these tarts was easy but I was too enthusiastic in torching the tarts that I totally forgot to let the filling set so maybe that’s why I ended up with not so pretty tops. But nevertheless, I managed to salvage some and I hope my sissy enjoys it as much as I did it with love ;)
